Hungarian Beef Goulash

1 pound beef stew meat
1 clove garlic, minced
2 medium onions, sliced
2 teaspoons paprika
1 teaspoon salt
1⁄2 teaspoon pepper
2 bouillon cubes
2 cups boiling water
1 cup hot water
2 cups diced potatoes

Directions for Hungarian Goulash: Cut meat into 1-inch cubes and brown in skillet, adding a bit of oil if needed. Add garlic, onions, paprika, salt and pepper. Dissolve bouillon cubes in boiling water and add to mixture. Cover and simmer 21⁄2 hours. Add hot water and potatoes. Cook 20 minutes longer or until potatoes are tender.
