Mama’s Roast with Brown Gravy

1 (3- to 4-pound) roast
1 1/2 teaspoons salt
1 teaspoon Fiesta Brand® Black Pepper
1 1/2 teaspoons rubbed sage
4 small onion slices
2 cups water
1/3 to 1/2 cup flour
Kitchen Bouquet, optional

Rub salt, pepper and sage on both sides of roast. Place 2 small slices of onion under roast in a covered roasting pan and 2 slices onion on top of roast. Pour 2 cups water in pan (do not pour over roast). Put lid on roaster and cook 2 1/2 to 3 hours in 325° oven. Remove from roaster and place on platter. To make gravy, mix 1/3 to 1/2 cup flour in enough water to make a paste. Add to juices from roast, stirring until thick. For a browner more favorful gravy, add a few drops of Kitchen Bouquet.
